VINEGAR PUDDING

SYRUP

3 cups water
1 and a half cups sugar
Half cup vinegar
Half a teaspoon ground ginger

Boil all above ingredients until it is dissolved

DOUGH

2 cups flour
Pinch of salt
2 tablespoons golden syrup
2 tablespoons butter
2 eggs
2 teaspoons bicarb dissolved in a half cup milk

Mix all ingredients together to form a soft dough. Place the syrup in an oven proof buttered dish. Add large spoonfuls of dough to the syrup. Bake in a preheated oven at 180 degrees for 1 hour or test with a knife - if it comes out clean the pudding is done.




BANANA BREAD

PREHEAT OVEN TO 180 DEGREES

2 cups flour
1 cup sugar
Half teaspoon bicarb dissolved in a half to 3/4 cup milk
1 teaspoon vanilla essence
1 teaspoon baking powder
125 grams margarine
2 well beaten eggs
2 large very ripe bananas - mashed
1/4 teaspoon salt

Sift all dry ingredients together.
Cream margarine and sugar.
Add the eggs.
Add bananas and vanilla essence, and fold in the dry ingredients while mixing well. Pour into greased loaf tin and bake for 1 hour, or until skewer comes out clean.
