BANANA BREAD
PREHEAT OVEN TO 180 DEGREES
2 cups flour
1 cup sugar
Half teaspoon bicarb dissolved in a half to 3/4 cup milk
1 teaspoon vanilla essence
1 teaspoon baking powder
125 grams margarine
2 well beaten eggs
2 large very ripe bananas - mashed
1/4 teaspoon salt
Sift all dry ingredients together.
Cream margarine and sugar.
Add the eggs.
Add bananas and vanilla essence, and fold in the dry ingredients while mixing well.
Pour into greased loaf tin and bake for 1 hour, or until skewer comes out clean.
